Executive Chef

As an Executive Chef at Reid’s Palace, a Belmond Hotel, Madeira you will be part of creating unforgettable moments for our customers, colleagues and community.

You will be responsible for overseeing all culinary operations at Reid’s Palace, a Belmond Hotel, Madeira, ensuring the highest standards of food quality, presentation, and guest satisfaction. The Executive Chef will manage all kitchen staff and develop innovative menus for all restaurants, including the Michelin-starred William Restaurant, Villa Cipriani Restaurant, Brisa do Mar, and all other hotel venues.

This role requires a visionary leader with exceptional culinary skills, strong management abilities, and a deep understanding of luxury hospitality. You will bring innovation to our venues, and you will work with a range of premium food products, locally sourced ingredients, and unique flavours to craft exceptional and exclusive dishes.

The Main Responsibilities are:

  • Strive for excellence in developing the kitchen through dishes, produce, standards, training and culture, ensuring food served retains its identity, ethos and quality at all times.
  • Actively support, promote and contribute to elevating our sustainability levels and initiatives in the property.
  • Keep up to date with trends within the food and luxury hospitality markets
  • Define the Menu conception for all restaurants, bars, banqueting and events, creating specific menu for each venue
  • Recruit, train and continually develop the kitchen team to achieve their personal best through demonstration of strong leadership skills
  • Lead by example and maintain an appearance and attitude appropriate to the role and demonstrate a clear sense of ownership and accountability.
  • Encourage, mentor and coach the department, and develop teamwork to deliver excellent standards.
  • Build genuine and effective relationships across all levels and departments
  • Set departmental objectives and budget and to subsequently control all departmental budgets
  • Achieving food cost targets and minimizing kitchen waste

Requirements

What you bring:

  • Working experience in a similar role in a luxury environment.
  • Minimum of 5 years of progressive culinary experience, with a significant time in a leadership role within a 5-star hotel, luxury resort, or high-end restaurant group.
  • Demonstrated experience managing multiple food and beverage outlets (fine dining, casual, banqueting, in-room dining).
  • Experience with Michelin-starred or equivalent award-winning kitchens is highly desirable for a luxury setting.
  • in-depth knowledge of various international cuisines, cooking techniques, and culinary trends.
  • Ability to design, cost, and implement creative, high-quality, and profitable menus across different dining concepts.
