Gestisce le operazioni quotidiane di stewarding e il relativo personale di cucina, supervisionando le risorse non direttamente coinvolte nella preparazione dei cibi (es. lavapiatti, aiuto cucina, ecc.).
Le principali responsabilità includono la gestione del lavaggio stoviglie, le pulizie notturne, la supervisione e manutenzione del back dock, l’impiattamento per eventi e banchetti e il servizio di distribuzione dei piatti.
Si impegna costantemente a garantire la soddisfazione di ospiti e dipendenti, nel rispetto del budget operativo.
