About Orient Express Venezia 

Orient Express will open its second hotel in Italy at the exceptional in Venice. Architect and interior designer Aline Amar d’Amman, alongside her studio Culture in Architecture, has been entrusted to design and decorate the space.

Venice, once the gateway to Constantinople and a mythical stop on the legendary Orient Express train – that opened its doors in 1919 with the completion of the Simplon tunnel linking Switzerland to Italy – will be the home of the second Orient Express hotel, set to open in 2026.

 

Descrizione del lavoro

 

Lo Chef de Partie contribuisce, insieme al Sous Chef e all’Executive Chef, alla produzione della massima qualità gastronomica possibile nella sezione assegnata in ogni momento. Coordina il personale della propria partita affinché tutta la produzione sia svolta nel rispetto del corretto controllo delle porzioni, del piano operativo del reparto, delle linee guida aziendali e dei concetti di servizio.
Lo Chef de Partie deve possedere elevate competenze culinarie, nonché buone capacità di leadership e comunicazione, poiché può essere spesso chiamato a guidare la sezione assegnata durante servizi serali particolarmente intensi.

 

Responsabilità principali

  • Prepara e guarnisce correttamente tutti gli ordini man mano che vengono ricevuti, in conformità con le specifiche del menu, garantendo un’adeguata presentazione dei piatti.
  • Prepara salse, zuppe e piatti caldi; controlla il posizionamento e la rotazione degli alimenti e assicura una corretta presentazione nel piatto.
  • Predispone la linea per il pranzo e la cena assicurando la disponibilità delle quantità adeguate in base alle coperture previste, agli eventi speciali e a tutte le prenotazioni.
  • Ordina le forniture necessarie per la propria sezione, predisponendo la mise en place.
  • Supervisiona la corretta preparazione di ogni voce del menu e ne garantisce la piena operatività.
  • Collabora con gli Chef per assicurare condimenti, porzioni e la massima qualità estetica dei piatti.
  • Conserva correttamente gli alimenti.
  • Garantisce che i piatti della propria sezione vengano serviti puntualmente.
