Mandarin Oriental Conservatorium is looking for a Sous Chef to join our Taiko Team.

About Taiko:

Under the leadership of Chef de Cuisine Lars Drost, Taiko’s culinary direction is centred around Japanese technique, product and presentation, complemented by refined influences from other Asian cuisines. With a strong focus on craftsmanship, seasonality and precision, Taiko offers both layered omakase experiences and an à la carte menu.

Open from Tuesday to Saturday, offering an exclusive dinner service.

As a Sous Chefyou will be responsible for the following duties:

  • Responsible for the internal organisation of Taiko kitchen, including the planning of menus, overseeing all aspects of food preparation, hygiene and cost control;
  • You will supervise Taiko kitchen team;
  • Delivering highest levels of quality and precision, preparing dishes in line with recipes and standards;
  • Maintaining highest levels of hygiene and cost control.

As Sous Chef we expect from you: 

  • Passionate and quality-driven approach to cooking;
  • At least two years of experience in a leadership role as Sous Chef;
  • Experience in inspired Middle Eastern cooking cuisine;
  • Good knowledge of English language (written and spoken);
  • Familiar with hygiene code and HACCP regulations;
  • Ability to work evenings and weekend shifts.
