Venues Commis

Venues Commis supports several areas in the Fairmont Century Plaza kitchens, primarily In-Room Dining but also, seasonally, the Rooftop Pool. You are a steady, independent worker who has consistent output, who works cleanly and in an organized fashion. You are curious: hopefully you love and enjoy food and cooking, and are always seeking to learn new or improve upon existing techniques and skills, and grow your knowledge of cuisines and food cultures.

What you will be doing:

· Preparing base recipes for the In-Room Dining and Rooftop Pool menus

· Reviewing garde manger (cold station) mise en place daily to ensure fresh quality product

· Assisting with receiving and stowing raw product upon delivery; being proactive in properly storing, labeling, and organizing product in venues cooler and dry storage spaces

· Learning the hot line to where you are comfortable stepping in to work during a colleague’s break, or assist during periods of higher volume business

Your experience and skills include:

To fulfil this role successfully, you should demonstrate the following minimum qualifications:

· Basic culinary training, whether on the job or via schooling

· One to 2 years’ experience in professional kitchen; comfortable with moderate volume of preparation

· Luxury experience appreciated

· Basic knife skills

· Basic knowledge of sauce preparation, protein and vegetable cookery, garde manger (cold/ salads station)

· Ability to read and follow recipes and directions,- and produce consistent end product

· Basic knowledge of food safety practices
