Job Summary
The Commis Chef assists the kitchen team in the preparation, cooking, and presentation of high-quality food in accordance with Marriott International standards. The role supports the efficient operation of the kitchen by maintaining cleanliness, adhering to food safety regulations, and ensuring guest satisfaction through consistent food quality and service excellence.
Key Responsibilities
Food Preparation & Production
  • Prepare ingredients for cooking, including washing, peeling, cutting, and portioning.
  • Assist in the preparation and cooking of menu items according to recipes and Marriott standards.
  • Ensure all dishes are prepared and presented to the required quality standards.
  • Support senior chefs during service periods to ensure timely food delivery.
  • Assist with buffet, banquet, à la carte, and special event food preparation.
Kitchen Operations
  • Maintain a clean, organized, and hygienic work area at all times.
  • Ensure proper storage, labeling, and rotation of food products using FIFO (First In, First Out) principles.
  • Monitor stock levels and report shortages to the Chef de Partie.
  • Assist in receiving and storing deliveries according to hotel procedures.
  • Operate kitchen equipment safely and responsibly.
Food Safety & Compliance
  • Adhere to Marriott’s Food Safety Management System and HACCP standards.
  • Follow all health, safety, and sanitation regulations.
  • Maintain personal hygiene and professional grooming standards.
  • Report equipment faults, maintenance issues, and safety hazards immediately.
