About the job

Based at the Mandarin Oriental, Hong Kong within Kitchen Department in Hong Kong, the Junior Sous Chef (Chocolate) is responsible for assisting the Executive Pastry Chef and Assistant Executive Pastry Chef to ensure sufficient and high quality food is prepared and displayed as mandated by the Executive Chef in order to acquire maximum customer satisfaction and profitability.  The Junior Sous Chef reports to the Executive Pastry Chef.

As Junior Sous Chef (Chocolate), you will be responsible for the following duties:

• Maintain a high standard of cleanliness and sanitation in and around all culinary work areas and clean their stations after every service
• Follow procedure and ensure safe and proper use of equipment at all times and to instruct this to all culinary associates
• Adhere to all the standards of food handling, production, preparation, portioning and presentation.

As Junior Sous Chef (Chocolate), we expect from you:

• 5 years relevant experience in similar capacity with Pastry experience;
• Self-motivated and responsible;
• Independent and able to work under pressure.
