The moment a guest steps into one of our hotels, they walk into a genuinely memorable experience. As leader of our Kitchen team, you’ll deliver this from the outset, delivering an exceptional dining experience that makes our guests and visitors alike, want to return time and again. Reporting to the General Manager, you are responsible for the delivery of the culinary divisions objectives by providing operational direction, support and guidance to a team of talented Chefs, catering to all of our outlets including All Day Dining Restaurant, Lobby Lounge, Club InterContinental, Event Operations and In-Room Dining.
A little taste of your day-to-day
Every day is different, but you’ll mostly be:
- Responsible for maintaining and delivering world class food quality standards
- Oversee department planning and rostering to ensure budgeted productivity and financial targets are achieved
- Coordinate culinary team resources, materials and equipment to ensure efficient execution of the culinary program across the hotel
- Driving continuous efficiency and productivity improvement
- Inspire, motivate, mentor and develop the culinary team
- Adhere to HACCP, Food Safety and WHS policies
- Waste management and minimizing cost control
- Collaborate closely with hotel teams across all dining venues and events to deliver a world class culinary experience
What we need from you
- Trade qualified with experience working within a Hotel restaurant as either an Executive Chef or a Head Chef (preferably for a minimum of 1-2 years)
- Must have previous experience in a premium venue, luxury hotel or similar high-end environment
- Experience in a professional commercial kitchen with a passion for culinary arts
- Strong understanding of HACCP / Food Safety / WHS and QA
- You will have proven experience working with and achieving brand standards at luxury or similar level
- Strong verbal and written communication skills
- Excellent time and interpersonal management skills
- Experience in manage a large cross functional team and developing an inspired, engaged culinary team
- Full working rights in Australia without restrictions.
- Impeccable grooming standards and good personal hygiene.
- Physical fitness as you’ll be on your feet most of the day. Sometimes you’ll need to lift, push and pull objects, up to 23 kg – we have the equipment to support you and keep you safe.
