About the location:

Four Seasons Tented Camp Golden Triangle, nestled near the convergence of the Ruak and Mekong Rivers, offers a unique vantage point overlooking Thailand, Burma, and Laos. This luxurious escape, reached by a boat journey down the Ruak River, is enveloped in a thick bamboo forest, combining the thrill of a jungle adventure with the comfort of the Four Seasons brand. The camp boasts 15 uniquely decorated tents and an Explorer’s Lodge, all reminiscent of 19th-century expeditions with handcrafted furnishings and modern amenities. Dine in style at Nong Yao, offering diverse cuisines, or enjoy a drink while watching the sunset at Burma Bar. From rejuvenating spa experiences amidst the bamboo forests to sightseeing trips exploring the rich history of the Golden Triangle, this camp promises a blend of nature, luxury, and cultural immersion.

 

 

About the role

The Chef De Partie is responsible for supervising, overseeing the preparation of food items for guest orders ensuring consistent quality and lead a cooking class experience for guest. This role requires a special talent and passion for ensuring the culinary team delivers the highest of culinary consistently, and ensuring that our food offering is at the center of our guest experience. The position reports to the Camp Chef.

 

What you will do

ESSENTIAL FUNCTIONS:

1. Participates in the preparation of food items according to guest orders of consistent quality following recipe cards, as well as production, portion, and presentation standards; complete misenplace for breakfast, lunch, and/or dinner service.

2. Lead a cooking class for guests, providing expert instruction and hands-on guidance as they learn to prepare.

3. Start food items that are prepared ahead of time, making sure not prepare beyond estimated needs.

4. Train, motivate, recommend discipline, and supervise the work of kitchen employees ensuring that all cultural and core standards are met.

5. Operate, maintain and properly clean kitchen equipment, including deep fryer, broiler, stove, steamer, food processor, mixer, slicer, oven, steam table, tilt kettle, waffle iron, and flat top grill.

6. Date all food containers and rotate as per policies, making sure that all perishables are kept at proper temperatures; check pars for shift use, determine necessary preparation, freezer pull and line set up; note any out-of-stock items or possible shortages; return all food items not used to designated storage areas, being sure to cover/date all perishables; assist in setting up plans and actions to correct any food cost problems; control food waste, loss and usage per policies.

7. Comply with Four Seasons’ Category One and Category Two Work Rules and Standards of Conduct as set forth in EmPact.
