Chef de Partie

Description:

  • Keeps the kitchen area clean.

    – Maintains food preparation according to recipes and plate presentation standards.

    – Knows how to operate equipment belonging to the kitchen area.

    – Maintains all operating items at established par stock level.

    – In-charge of storage of all materials as well checking newly received goods.

    – Assists with preparing rosters as required.

    – Enforces and maintains at the highest possible level the equipment cleanliness and repairs of the kitchen area.

    – Assists with controlling the food cost by following standard portioning and portion control.

    – Prepares and supervises daily mise-en-place according to established checklists and cover forecasts.

    – Ensures that all fridges are kept at ideal temperatures and ensure appropriate action is taken in case of breakdown.

    – Takes charge and coordinates production in the kitchen assigned during service.

    – Liaises closely with the pass to ensure all orders for one table go out at the same time.

    – Checks all orders for presentation

    – Ensures orders are picked up as soon as they are ready.

    Pastry/Bakery

    – Supervises

  • coordinates and participates
  • preparation of all kinds of dough

    – Supervises

  • moulding and baking of bread
  • rolls
  • cakes
  • pies
  • desserts and other kinds of bread.

    – Supervises

  • coordinates and participates
  • decorating and apportioning of desserts in buffet presentations.

    – Checks daily menus and function sheets to determine the kind and quantity of pastries and desserts to prepare

  • initiates requisitions based on plan and functions.

    – Prepares all ingredients for baking

  • measures and mixes according to recipe
  • bakes cakes and cuts and ices cakes as required.

    – Plans production in order to have freshly baked bread

  • pastries etc. available during service and in the quantities required.

Qualifications:

  • Min diploma in culinary arts or equivalent.

    – Past experience working in a similar role.

    – Knowledge of best practices for safety and sanitation.

    – Passion for delivering great food and service.

    – Available to work shifts during weekends and holidays.
