The Four Seasons Hotel Hampshire is a resort hotel in the countryside, just 10 minutes from the town of Fleet and Farnham and 45 minutes from London. With a varied selection of restaurants focusing on use of local produce, banqueting for 200 and with 24-hour room service, our guests have a lovely collection to choose from.
About the role
As a Junior Sous Chef, you become a vital hinge in the rhythm of the kitchen. You will support the Sous and Head Chef while also taking ownership of sections, leading by example, and keeping service flowing smoothly. Your day may stretch from early prep in a peaceful kitchen to the exhilarating tempo of a fully booked service. You’ll mentor junior chefs, refine dishes, uphold standards, and ensure every plate carries the story and quality of the kitchen.
In this casual role, flexibility becomes your superpower. You may step in for busy weekends, special events, private dinners, or to support the brigade during peak seasons. Your presence helps hold the kitchen together during its most crucial moments.
What you’ll do
• Assist in managing daily kitchen operations and supporting senior chefs
• Take charge of specific sections during service, ensuring smooth and consistent delivery
• Train, support, and motivate Commis and Chef de Partie team members
• Contribute to menu development, seasonal specials, and new dish trials
• Maintain impeccable standards of cleanliness, food safety, and HACCP compliance
• Monitor stock, assist with ordering, and reduce waste where possible
• Uphold the kitchen’s culture of teamwork, respect, and continuous improvement
• Step into supervisory responsibilities in the absence of senior chefs
What you’ll bring
• Previous experience as a Chef de Partie or Junior Sous Chef
