Sous Chef

POSITION SUMMARY

Il/La Sous Chef supporta l’Executive Chef nella gestione operativa della cucina centrale, con focus specifico su Room Service, Servizio Breakfast e Lounge Bar. Garantisce standard elevati di qualità, tempi di servizio efficienti, corretta gestione del personale e rispetto delle procedure HACCP, contribuendo alla soddisfazione dell’ospite e all’efficienza del reparto.

 

Responsabilità principali – OPERATIONS

Coordinare le attività della cucina centrale per i reparti:

✔ Room Service

✔ Breakfast

✔ Lounge Bar (mise en place food, snack, light meals)

Garantire la preparazione, cottura e presentazione dei piatti secondo gli standard dell’hotel.

Assicurare puntualità e qualità del servizio Room Service, mantenendo un flusso di produzione costante ed efficiente.

Coordinare e supervisionare il buffet e la produzione colazioni, assicurando varietà, freschezza e replenishment puntuale.

Collaborare con il Bar Manager per l’allineamento dell’offerta food del Lounge Bar.

Gestire le comande con rapidità e precisione nei momenti di alta affluenza.

 

Gestione del Team

Guidare e supportare la brigata assegnata (commis, demi chef, chef de partie).

Organizzare turni, assegnazione compiti e supervisione dei flussi di lavoro.

Formare il personale su ricette, tecniche di cottura, presentazioni dei piatti e standard operativi.

Monitorare performance, motivazione e rispetto delle procedure.

Favorire un ambiente di lavoro positivo e collaborativo.
