About the job

Based Mandarin Oriental Jakarta, the Commis de Cuisine Bakery is responsible for assisting senior chefs in food preparation and other related tasks. This role is crucial to the Culinary Department, upholding the values and standards of MOHG. The Commis de Cuisine Bakery reports to the Sous Chef (Bakery).

As Commis de Cuisine Bakery, you will be responsible for the following duties:

1. Daily Operational

• Supervise the assigned station within Bakery Kitchen, ensuring efficient management according to established concept statements
• Oversee assigned kitchen trainees
• Prepare menus using quality, available, and seasonal ingredients, and complete daily and weekly market lists
• Perform opening and closing procedures for the assigned station.
• Carry out additional duties as reasonably requested by the Executive Pastry Chef

2. Productivity

• Organize food production in a cost effective and hygienic manner
• Identify opportunities for reducing costs without affecting the level of service or product received by our guests
• Identify opportunities for improving the efficiency of the operation of the assigned workstation that will benefit our guests

3. Safe and Sound (HACCP)
