Director of Restaurant, Bar

Mandarin Oriental, Da Nang is a forthcoming ultra-luxury beachfront resort located on Vietnam’s central coastline, approximately 15 minutes from Da Nang International Airport. Currently targeted to open in 2027, the resort is being developed as a villa-led luxury destination featuring approximately 60 resort villas together with around 80 branded residences within the wider development. Guests will enjoy a range of luxury resort experiences including dining venues, wellness facilities, curated resort experiences, water sports activities, beachfront amenities, and private villa pools. Combining Mandarin Oriental’s legendary service with one of Vietnam’s most desirable coastal destinations, the resort represents one of the Group’s most significant upcoming openings in Southeast Asia.

As Director of RB&E, you will be responsible for the following duties:

• Leads the Food & Beverage and Experiences operations.
• Ensures guest feedback and comments are adequately handled.
• Provides leadership and support for all direct reports and other colleagues in the division and maintains effective colleague relations.
• Ensures the colleagues’ career path and development needs are prioritized and documented along with performance management and a positive work environment is established and maintained.
• Conducts such functions as interviewing, hiring, employee orientation, performance reviews, coaching, counselling, and dismissal if necessary to ensure appropriate staffing and productivity reviews.
• Participates in public relations activities and promotional activities for the Food & Beverage and Experiences division.
• Leads all functions of the Restaurant, Bar & Experiences division, facilities, and financial performance to ensure maximum departmental profit and cost efficiency is achieved.
• Keeps Restaurant, Bar & Experiences costs in line with budget.
• Analyses sales mix, Restaurant, Bar & Experiences costings and pricing on a regular basis.
• Monitors market prices and makes revisions whenever needed.
• Reviews and analyses market trends globally and locally to ensure the operation remains current and competitive.
• Leads the implementation of new Restaurant, Bar & Experiences concepts and projects.
• Participates in the preparation of the annual budget and marketing plan, taking ownership of the Restaurant, Bar & Experiences division components.
