The Senior Chef De Partie reports to the Sous Chef and is responsible for the day-to-day operations of an outlets kitchen. They work closely with the Sous Chef as well as other kitchen staff to ensure that all dishes are prepared to the highest standards and hygiene stanrards are maintained. The ideal candidate will have a strong culinary background and experience in a high-volume kitchen.
What you will be doing:
>Prepare all food items for a la carte and buffet menus according to hotel recipes and standards
>Communicate expectations and standards to kitchen colleagues
>Continually strive to improve food preparation and presentation
>Maintain proper rotation of product to minimize wastage/spoilage
>Have full knowledge of all menu items, daily features, and promotions
>Ensure the food safety procedures, cleanliness and maintenance of all work areas, utensils, and equipment
>Train and develop kitchen employees
>Develop and implement new recipes
>Order and maintain inventory of food and supplies
>Train and develop kitchen employees
>Assume supervisory responsibilities in the absence of the Senior Chef de Partie/Sous Chef
>Deliver Leading Quality Assurance Standards for your position
>Be available to meet with guests, clients or other stakeholders as required
>Other duties as assigned
Your experience and skills include:
>4+ years of experience in a high-volume kitchen, luxury hotel environment is a plus
>Documented culinary certification (Red Seal certificate, Journeyman’s papers, or international equivalent) is strongly preferred
>Demonstrated creative culinary skills are required
>Strong interpersonal and communication skills (verbal and written, fluent in English) and work cohesively as part of a team in a multi-cultural, diverse environment
>Knowledge of food safety regulations
>Ability to work under pressure and meet deadlines with attention to detail and accuracy
>Computer literate in MS Office applications is an asset
>Strong work ethic, highly responsible, reliable and the ability to work shifts, extended hours including evenings, weekends and public holidays is required
