Dans le cadre de la politique et des stratégies définies par le Chef des Cuisines et sous la Responsabilité du Sous-Chef de cuisine, elle/il participe à la fabrication qui a été confiée à son supérieur hiérarchique.
Il participe à la garantie des normes d’hygiène et de sécurité de leur poste de travail.
Il assure la qualité du produit dont il est responsable et participe à son évolution.
