Executive Sous Chef

Located in the heart of Auckland’s central business district, experience mindful luxury at JW Marriott Auckland. Job Description:

1. Operational & Kitchen Management

  • Manage day-to-day kitchen operations ensuring quality and cost efficiency
  • Supervise and coordinate chefs and food preparation staff
  • Monitor staffing levels to meet operational and guest service needs
  • Ensure all food-related functions run smoothly
  • Oversee purchasing and receiving processes with proper controls

 

2. Leadership & Team Management

  • Provide direction, guidance, and performance management to kitchen associates
  • Lead by example demonstrating integrity, professionalism, and work ethic
  • Build a culture of trust, respect, and teamwork
  • Use strong interpersonal and communication skills to influence and motivate staff
  • Encourage collaboration and cooperation among team members

 

3. Financial & Cost Control

  • Manage controllable expenses (food cost, supplies, uniforms, equipment)
  • Support sound financial and business decision-making
  • Ensure operations align with financial objectives

 

4. Menu Development & Culinary Direction

  • Provide direction and input into menu development
  • Ensure alignment of menu offerings with guest expectations and business goals

 

5. Compliance, Safety & Procedures

  • Develop and implement control procedures for purchasing and receiving
  • Ensure adherence to food safety standards and procedures
  • Communicate safety protocols clearly to staff
  • Monitor compliance with safety regulations and codes
