Acerca del rol

El chef de restaurante encarga de la operación de la cocina, manteniendo altos estándares de calidad y velando por la satisfacción del cliente. Así mismo, se encarga de apoyar al Sous Chef ejecutivo en labores administrativas.

 

Funciones

  • Asegurarse de que la cocina asignada sea manejada eficientemente acuerdo al concepto establecido, proporcionando un servicio cortés, profesional, eficiente y flexible todo el tiempo, siguiendo los estándares de rendimiento de Four Seasons.
  • Tener un conocimiento del trabajo completo y capacidad para supervisar, corregir y demostrar todos los deberes y tareas tanto en el lugar de trabajo asignado como por la Lista de Tareas. Comprobar que la Lista de Tareas esté revisada y cambiada conforme la marcha dependiendo de las expectativas de los clientes y las filosofías operativas.
  • Asignar responsabilidades al personal a cargo, haciendo efectivo principalmente en las tareas múltiples y chequeando su rendimiento periódicamente.
  • Establecer y observar estrictamente las existencias para todos los equipamientos operativos, suministros, artículos de inventario, y asegurarse que el centro esté adecuadamente equipado.
  • Llevar a cabo un chequeo de inventario mensual en todos los equipamientos operativos y suministros.
  • Controlar el almacenaje de artículos y el uso cuidadoso de todos los equipamientos operativos y suministros.
  • Llevar a cabo diariamente los informes en el pre-turno a los empleados acerca de la preparación, el servicio y el menú.
  • Enlazarse con el Departamento de Alimentos y Bebidas en las operaciones diarias y el control de calidad.
  • Tener un profundo entendimiento y conocimiento de todos los productos de alimentos y bebidas del menú y tener la habilidad de recomendar combinaciones de los mismos y ventas alternativas si fuera necesario.
