Head Chef – Casa Brera

Casa Brera, a Luxury Collection Hotel, Milan is currently recruiting a Head Chef.

Reporting to the F&B Manager, the role is responsible for kitchen operations, with a focus on consistency, quality, and efficiency.

Rooted in a strong sense of place and craftsmanship, this role is ideal for a hands‑on chef with a solid hospitality background and a passion for delivering thoughtful, well‑executed cuisine. The Head Chef will play a key role in guiding and engaging the kitchen team, ensuring consistency, quality, and a seamless culinary experience across Etereo rooftop restaurant, room service and events.

Key Responsibilities are:

  • Oversee daily kitchen operations for Etereo, In‑Room Dining, and Events, ensuring consistent quality and execution.
  • Lead and motivate the kitchen team, promoting collaboration, engagement, and professional standards.
  • Maintain food quality, presentation, and hygiene in line with company and legislation standards.
  • Support menu development and seasonal updates aligned with the restaurant concept.
  • Work closely with F&B and Events teams to ensure smooth service and cohesive guest experience.
  • Monitor cost control, ordering, and stock management.

What you’ll do

Ensuring Culinary Standards and Responsibilities are Met

  • Prepares and cooks foods of all types, either on a regular basis or for special guests or functions.
  • Reviews and adjust systems and procedures in the kitchen to ensure their effectiveness.
  • Develops, designs, or creates new menus and recipes based on standards or artistic contributions.
  • Demonstrates knowledge of high quality food products, presentations and flavor.
  • Ensures compliance with food handling and sanitation standards.
  • Ensures compliance with all applicable laws and regulations.
  • Follows proper handling and right temperature of all food products.
  • Knows and implements brand’s Safety Standards.
  • Supervises kitchen shift operations and ensures compliance with all Food & Beverage policies, standards and procedures.
  • Maintains purchasing, receiving and food storage standards.
