En tant que leader de la cuisine, le/la Sous-Chef de Cuisine coordonne, dirige et supervise l’ensemble de l’activité de la cuisine et de ses différentes parties. Amené à remplacer le chef lors de ses absences, il prend alors en charge le management de l’ensemble de la brigade.
Le sous-chef est adaptable car il est positionné entre le Chef Exécutif et la brigade. Il y a un rôle important de transmission d’information ascendante et descendante.
