Supervisionar as atividades da área, orientando equipe, priorizando/distribuindo tarefas e solucionando os problemas operacionais pertinentes.
• Garantir a higienização das cozinhas, refeitórios, copas de eventos, doca de recebimento, câmaras de lixo, materiais, utensílios e equipamentos utilizados na preparação de alimentos.
• Supervisionar os processos de coleta e reciclagem de lixo, conforme normas e procedimentos da marca.
• Assegurar o cumprimento dos procedimentos de coleta seletiva e retirada do lixo das áreas de Alimentos e Bebidas e orientar os responsáveis pelo controle de pragas, conforme cronograma interno.
• Disponibilizar material operacional de A&B necessário à mise-en-place dos restaurantes, bem como acompanhar a montagem e desmontagem dos buffets.
• Requisitar materiais e produtos necessários à higienização de cozinhas, refeitórios, buffets, utensílios e equipamentos. • Realizar o inventário de materiais operacionais de A&B.
• Controlar danos e reposição de materiais operacionais de A&B.
• Garantir o cumprimento integral das boas práticas de segurança alimentar e “Auto Controle”.
• Supervisionar equipe sob sua responsabilidade, bem como controles de departamento pessoal, EPI (Equipamento Proteção Individual) elaborar escalas de trabalho, e demais atribuições de gestão de pessoas, assim como definir padrões de tempo e qualidade de serviços dos colaboradores sobre sua gestão em conjunto com seu superior imediato.
• Executar outras atribuições correlatas de acordo com a necessidade da área.
Equipamentos e materiais de A&B
• Técnicas de higienização e limpeza em áreas de manipulação de alimentos e bebidas
• Conhecimento do uso de EPIs
• Conhecimento em pacote Office e Internet.
• Conhecimento em manipulação de produtos químicos de higienização
