Restaurant Manager

  • Lead from the Floor: Be present during service—anticipate guest needs, troubleshoot in real time and set the tone for genuine, efficient hospitality.
  • Inspire Excellence: Recruit, coach and empower your team—design tailored training on wine pairings, mixology and polished table service.
  • Curate the Experience: Oversee operations each service, from guest arrivals to final pours, ensuring every interaction feels effortless and bespoke.
  • Elevate the Beverage Program: Partner with our Sommelier to refine an ever-evolving wine list; introduce seasonal cocktails that resonate with our coastal ambience.
  • Drive Performance: Master P&L outcomes—optimise rostering, manage inventory and cultivate supplier relationships to uphold the highest standards.
  • Champion Culture: Create a culture of excellence that feels effortless and authentic—foster a warm, inclusive environment where professionalism meets genuine care.

About You

  • At least five years in restaurant or hotel F&B leadership, ideally within privately owned or boutique luxury venues.
  • Deep knowledge of Australian and international wines; formal sommelier accreditation highly regarded.
  • Proven talent for mentoring and developing high-performing service teams.
  • Exceptional attention to detail, polished communication and an unwavering commitment to quality.
  • Strong commercial acumen with demonstrated success in budgeting, forecasting and revenue optimisation.
