Job Description

 

The Director of Food & Beverage leads the vision, strategy, and daily operations of all dining, bar, and banquet services across the resort. As a key Executive Committee member, they ensure consistent quality, profitability, and exceptional guest experiences that embody M Gallery’s “Memorable Moments” philosophy. This role requires a hands-on leader with culinary expertise and a passion for storytelling and hospitality.

Key Responsibilities:

  • Develop and implement unique and innovative food and beverage concepts across all outlets, collaborating with the Executive Chef to highlight local flavors and global trends while curating seasonal and themed experiences that reflect the resort’s identity
  • Lead, develop, and inspire a diverse F&B team by fostering a culture of collaboration and hospitality, while driving financial performance through strategic planning, cost control, sustainable practices, and effective supplier partnerships
  • Ensure exceptional guest experiences through personalized service, consistent quality, and proactive feedback management, while upholding brand standards, operational excellence, and collaborating on creative beverage programs and marketing initiatives.
  • Promote sustainability and community engagement by partnering with local producers, supporting eco-friendly initiatives, and representing the resort in culinary events and destination promotions

 

Qualifications

 

  • Proven experience as Director of Food & Beverage (or similar senior F&B leadership role) in a luxury resort or international five-star propertyStrong leadership and people management skills, with ability to inspire, mentor, and develop teams.
  • Demonstrated success in revenue growth, cost management, and concept innovationSolid financial acumen, including budget management, cost control, and revenue optimization.
  • Strong understanding of menu engineering, food cost control, and F&B analytics.
  • Excellent knowledge of wines, spirits, mixology, and current global beverage trends.
  • Degree or diploma in Hospitality Management, Business Administration, or Culinary Arts.
  • Advanced understanding of food safety, HACCP, and sustainable operations
  • Strong leadership and communication skills, with the ability to inspire large, multicultural teams.
  • Creative and strategic thinker, able to translate ideas into profitable concepts.
  • Fluent in English; additional languages are an advantage
