PROPÓSITO DEL CARGO:
Desarrollar nuevas tendencias gastronómica
Desarrollar menú y cartas
Manejar su cocina de manera sostenible
Es responsable de organizar y supervisar la producción y el servicio.
Mantener la limpieza y las buenas prácticas de manufactura de BPM, que se cumpla las normas de seguridad personal e higiene.
Realizar pedido y cuidar del buen uso de la materia prima, cuidar y mantener los costos.
Mantener y crear un buen clima laboral.
Conocer la satisfacción de sus clientes.
Promover y desarrollar su restaurante
RESPONSABILIDADES CLAVE:
– Buscar tendencias culinarias
– Participar en la elaboración de los diferentes presupuestos
– Elaboración de: menús, carta del restaurante
– Elaboración de recetas y fichas técnicas
– Asegurar estandarización de mise en place y montaje
– Es responsable de la buena presentación de los platos y de su adecuada
– Crear y organizar eventos especiales y festivales entre otras
