Pastry Sous Chef

Mandarin Oriental Palace Luzern is looking for a Pastry Sous Chef to join our Culinary team.

About the job

 

Based at the Mandarin Oriental Palace, Lucerne, within the Culinary Department, the Pastry Chef is responsible for overseeing and managing the entire pastry kitchen. The Pastry Chef leads the team, ensuring the highest standards of quality, consistency, and efficiency across all areas of the pastry operation. This role includes supervising and coordinating all pastry production, developing innovative dessert and menu concepts, and reports to the Executive Pastry Chef in strategic planning and daily operations.

 

As Pastry Sous Chef, you will be responsible for the following duties:

 

  • Work closely with the Executive Pastry Chef to execute the vision and maintain excellence across all pastry operations. Provide guidance, support, and motivation to the pâtisserie team in daily activities.
  • Prepare and produce a wide range of cakes, pastries, desserts, and specialty items with precision and consistency.
  • Manage and oversee production for banquets, events, and special functions, ensuring timely delivery and exceptional quality.
  • aintain organized and efficient daily mise en place to support seamless pastry operations.
  • Contribute to menu planning, recipe creation, and the development of innovative dessert concepts.
  • Coordinate with supervisors to request ingredients and supplies, monitor deliveries, and ensure proper storage and rotation of all goods.
