Le 1er Maître d’hôtel gère le bon fonctionnement du restaurant au quotidien. Il encadre le personnel de salle, organise les services et veille à la satisfaction des clients. Il gère les stocks, les commandes et les plannings. Il s’assure du respect des normes d’hygiène et de sécurité. Il contribue à la rentabilité du restaurant en optimisant la qualité du service et les ventes.
