About the location:

On Colombia’s Caribbean coast, in the historic city of Cartagena, Four Seasons is revitalizing a collection of landmark buildings dating as far back as the 16th century. Acerca del rol:
Se encarga de la preparación básica de ingredientes, asistencia en la elaboración de productos de repostería como pasteles, galletas y postres, y el mantenimiento de la limpieza y organización en su estación de trabajo. Además, apoya en la decoración y presentación de los productos, siguiendo las indicaciones y recetas establecidas para garantizar la calidad y consistencia de los productos finales.

Lo que vas a hacer:
•    Realizar todas las actividades de abre y cierre de estación asignadas por el chef/check list del área de repostería y panadería.
•    Solicitar y recoger de las bodegas de suministros las mercaderías siguiendo las normas y procedimientos de Four Seasons.
•    Controlar los suministros de operación y reducir el deterioro y el desperdicio excesivo.
•    Coordina el stock diario de suplementos operativos, enviando el pedido a su supervisor.
•    Revisar que los insumos se encuentren en óptimas condiciones para el consumo o en buenas condiciones para el servicio de cocina.
•    Realizar la Mise en place / producción del área de repostería y panadería.
•    Garantizar que se tenga el mise in place en orden, para cubrir totalmente la operativa, en cualquier estación de cocina que estar asignado.
•    Ejecutar las preparaciones de cocina, siguiendo estrictamente las recetas definidas en el área de repostería y panadería.
•    Mantener consistencia en las preparaciones de alimentos y bebidas de acuerdo con las normas de Four Seasons.

 

Requisitos:
•    Técnico en cocina (deseable) o experiencia equivalente a 1 año y medio como cocinero
•    Mínimo 1 año de experiencia como cocinero.
•    Conocimiento de preparación de mezclas en volumenes medianos.
•    Conocimiento básico en manejo de chocolate.
•    Conocimiento básico en el manejo de maquinaria de pastelería.
•    Conocimiento básico de masas laminadas.
