Head Baker

 

Reporting to the Executive Sous Chef, responsibilities and essential job functions include but are not limited to the following:

  • Lead the daily baking operations including (but not limited to) breads, pastries, and specialty baked goods for all outlets and banquet functions as directed by culinary management.
  • Assist in the development and refinement of recipes as requested by culinary management.
  • Assist in onboarding and training on new bakery staff to ensure consistency and quality standards.
  • Demonstrates and uses proper time management skills.
  • Produces centerpieces (when required) in a timely manner using the following mediums: Salt Dough, Décor Dough, Dead Dough and the like.
  • Training in the proper usage, Maintenance and Cleaning of all pastry equipment such as: Spatulas, Mixers, Various Knives, Blenders, Food Processors, Pastry Bags, Ovens, Sheeter, etc.
  • Requisition supplies and equipment and sees that they are delivered and properly stored.
  • Properly store unused ingredients for future use, minimizing waste and ensuring food safety.
  • Fill out any required food safety logs and records accurately.
  • Maintains production records as required.
  • Actively participate in the preparation and production of bakery items as needed to support the team and meet demand.
  • Oversee and ensure the consistent production of all baked goods required to maintain mise en place levels in the pastry shop.
  • Maintain a clean, organized, and sanitary work environment in accordance with health and safety standards; guide staff in upholding these practices.
  • Advise culinary management on the schedule to match production needs.
  • Adhere to assigned work schedule and ensure timely execution of tasks.
  • Produces special occasion cakes when necessary.
  • Maintain a personal log of approved formulas given to you by kitchen management.
  • Hourly Rate: $37.62 USD per hour
