Head Chef

Additional Information: This hotel is owned and operated by an independent franchisee, Oklahotel (Pty) Ltd. The franchisee is a separate company and a separate employer from Marriott International, Inc. The franchisee solely controls all aspects of the hotel’s employment policies and practices, including hiring, firing, discipline, staffing, compensation, benefits, and all other terms and conditions of employment. If you accept a position at this hotel, you will be employed by a franchisee and not by Marriott International, Inc.

• Manage the daily operations of a high-performing kitchen team

• Collaborate with the Executive Chef on menu innovation, seasonal offerings, and supplier selection

• Maintain impeccable food quality, portion control, and visual presentation

• Lead sustainable procurement initiatives, working closely with suppliers to source ethically and responsibly

• Oversee inventory management with an emphasis on minimizing waste and maximizing efficiency

• Conduct regular hygiene audits to ensure strict compliance with health and safety standards

• Champion kitchen cleanliness, food safety protocols, and sanitation practices

• Train and develop kitchen staff, promoting growth and accountability

• Monitor food costs, labour efficiency, and contribute to overall profitability. Ensuring exceptional customer service delivered by self and culinary team

Previous experience working as an Executive Chef and Chef trade qualification

· Demonstrated ability to inspire and motivate a team – lead by example

· Ability to build strong relationships with producers, suppliers, stakeholders and ensure quality-sourced produce

· Impeccable attention to detail

· Team player, who integrates with all of the Hotel teams to drive guest and employee satisfaction

· Proactive with the willingness to take initiative and make sound business decisions

· Driven, creative, with a genuine passion for cooking and a strong customer service focus

· Current knowledge of culinary trends and industry best practices – growth mindset

· Commitment, determination, and reliability (with the availability to work late nights and on weekends as required)

• Extensive experience as a Head Chef or Senior Sous Chef in a steakhouse or fine dining setting
