Marmelo is a restaurant and bar inspired by the coastal cuisine of Portugal and Spain with a focus on fresh and seasonal ingredients. The restaurant celebrates a unique culinary style with a focus on Iberian coastal dining embracing the seafaring and fishing traditions of Port Melbourne. Wood and charcoal cooking methods impart incredible flavours bringing authenticity to the cooking process.
Marmelo is located within Hyde Melbourne Place and operated by multi award-winning, restaurateurs – Ross & Sunny Lusted. Also appointed by Gourmet Traveller as the Victorian Restaurant of the Year 2025
As the first and last point of contact for our guests, the Host plays a pivotal role in shaping the dining experience. You’ll be responsible for creating a warm, professional, and memorable welcome, ensuring guests are seated comfortably, and managing the flow of service through effective reservations and seating coordination.
