OBJECTIF DU POSTE :

 

Le Chef de Partie Nuit est responsable hiérarchiquement des personnes avec qui il collabore. Il a pour rôle de produire les mises en place nécessaires proportionnellement à la demande de la clientèle et de l’activité de l’hôtel et de tenir son poste avec une hygiène irréprochable. Il doit également effectuer les commandes de marchandises avec l’aide du Sous-Chef de Cuisine.

 

 

FONCTIONS ESSENTIELLES :

 

  • Etre capable de suivre les procĂ©dures vestimentaires.
  • Etre capable de faire tourner chaque jour chaque poste dans la cuisine.
  • Etre capable d’assister Ă  la crĂ©ation et Ă  la prĂ©paration des nouveaux menus.
  • Etre capable  de vĂ©rifier et de complĂ©ter la mise en place de chaque poste.
  • Etre capable de complĂ©ter les demandes, d’obtenir les signatures et de les soumettre au dĂ©partement des achats.
  • Etre capable  de communiquer avec les Sous-Chef et le Chef ExĂ©cutif au sujet des menus, des situations Ă  problèmes et manques.
  • Etre capable de travailler Ă©troitement avec les recettes standards et les prĂ©sentations des plats, afin de maintenir les standards de qualitĂ© de production et de prĂ©sentation.
  • Etre capable de maintenir de bonnes relations de travail avec les autres dĂ©partements de l’hĂ´tel, en rĂ©pondant aux besoins si nĂ©cessaire.
  • Etre capable de stocker correctement  les articles Ă  la fin de chaque shift.
  • Etre capable de maintenir son lieu de travail propre, soignĂ© et organisĂ© en respectant les    standards.
  • Etre capable de traiter et de rapporter immĂ©diatement tout incident.
  • Etre capable de mener Ă  bien et de manière professionnelle tous les standards de la chaĂ®ne           Four Seasons en encourageant les employĂ©s Ă  les suivre et les appliquer.
  • Etre capable de faire face Ă  toute situation d’urgence, en termes de sĂ©curitĂ©, au sein de            l’hĂ´tel.
  • Etre capable d’effectuer toute autre tâche ou projet assignĂ© par la Direction, par un cadre ou              par un employĂ©.
  • Etre capable d’être attestĂ© dans les services sanitaires.
  • Etre capable d’avoir des connaissances des standards Four Seasons concernant la nourriture.
  • Appliquer et maĂ®triser les standards de qualitĂ© liĂ©s Ă  votre fonction.
  • Etre capable de nettoyer correctement son poste après avoir stockĂ© et Ă©tiquetĂ© la nourriture avec prĂ©cision.
