Sommelier
We are seeking a lady or gentlemen with the ability to provide the finest guest dining experience and train the restaurant service teams in wine knowledge and service. In-depth wine education and certification/diploma in hospitality is essential with years of experience in food & beverage in a high-end restaurant/hotel. Fine dining restaurant sommelier experience preferred. The Food & Beverage Sommelier will monitor inventory of wine cellar, ensuring appropriate quality and quantity, and proper storage and disposal of wines, create and update wine lists for outlets or restaurants, order and keep inventory of specialty wine equipment, meet with wine distributors and purveyors to ensure positive vendor relationships, and utilize suggestive up-selling techniques while pairing and suggesting wines that will best complement each particular food menu item. Requirements of the ideal candidate include:
• Extensive and nuanced knowledge of global wine regions, varietals, and pairing principles
• Formal certification or diploma in wine studies (e.g., WSET, Court of Master Sommeliers)
• Proficiency in digital systems for updating wine lists and managing POS platforms
• Demonstrated experience in inventory control, stock management, and cellar organization
• Expertise in proper decanting techniques and service etiquette for various wine styles
• Familiarity with high-end wine service tools and glassware standards
• Exceptional interpersonal and communication skills, with a commitment to delivering refined guest service
• Strong upselling and sales acumen, with the ability to recommend wines that enhance the dining experience and drive revenue
• Willingness to participate in ongoing professional development through tastings, seminars, and training sessions
• Flexibility to work in diverse environments, including indoor and outdoor settings, and availability on weekends and holidays
Issue, open, and serve wine/champagne bottles. Answer guest questions or concerns regarding the origin, vintage, and style of various wines. Update and maintain wine list and MICROS system. Pair and suggest wines that will best complement menu items. Attend wine tastings and develop relationships with vendors. Request new wines and products. Create and update wine lists. Design and implement wine promotions and incentive programs. Monitor and replenish inventory of wine cellar, equipment, and glassware. Train and educate server and bartender staff. Conduct vintage and BIN number checks. Conduct staff wine tastings. Secure liquors, beers, wines, coolers, cabinets, and storage areas. Follow all state and local laws for serving alcohol responsibly. Maintain accurate spill sheet.
