Review daily events and reservations with the Culinary Leadership to ensure timely preparation of food items in line with Fairmont’s high standards of quality and efficiency.
Execute food preparation, cooking, plating, and presentation with precision, meeting the expectations of a world-class culinary experience.
Maintain a clean and organized kitchen environment, adhering to all food safety and sanitation protocols.
Ensure proper rotation and storage of products in all chillers to minimize waste and spoilage.
Handle, store, prepare, and serve all food products safely, strictly following Fairmont Waterfront’s guidelines and Food Safety standards.
Complete all EHC (Environmental Health Consultancy) standards daily, including filling out temperature logs, labelling and dating items, and maintaining cleanliness in food storage areas.
Qualifications
Previous 18 months experience in a high-end kitchen required
Previous experience working in a luxury hotel an asset
High level of knife skills
Diploma/Certification in a Culinary discipline preferred
BC Food Safe Certification required
Strong interpersonal and problem-solving abilities
Highly responsible & reliable
Ability to work well under pressure in a fast-paced environment
Ability to work cohesively as part of a team
Ability to focus attention on guest needs, remaining calm and courteous at all times
