Assistant Director of Food & Beverage

Hotel Overview: 

Situated atop the scenic bluffs overlooking Santa Monica Beach, Fairmont Miramar Hotel & Bungalows is just a stone’s throw away from some of Southern California’s best attractions including Santa Monica Pier and its historic carousel as well as Third Street Promenade — famous for its fine restaurants, live entertainment, movie theatres, shopping, local artists’ scene and a weekly farmer’s market.

– Pay Range: $95,000 to $110,900 Yearly Salary

 

Job Description

 

Summary of Responsibilities:

Reporting to the Director of F&B, responsibilities and essential job functions include but are not limited to the following:  

– To supervise the function of all F&B colleagues, facilities and financial performance to ensure maximum departmental profit and cost efficiency is achieved.

– To manage yearly the pre-opening, opening, running and closing of all Banqueting events at the same high level of standard as our regular outlets.

– To control and analyze, on an on-going basis, in order to optimize the following: quality levels of products and service, guest satisfaction, quality measurements (such as LQA & Fairmont Benchmarks), merchandising and marketing, financial performance and hygiene and cleanliness.

– To coordinate and supervise the preparation, presentation and service of food and beverage products to ensure the highest quality at all times.

– To keep an up-to-date standard recipe file for F&B items to include sales history, sales mix, actual costs, potential costs, par stock and production time.

– To ensure maintenance and programming of all F&B systems.

– To ensure that all hardware is operational and updated.

– To organize annual maintenance of the contingency systems that support IT&T equipment and systems.

– Identify F&B technology trends that might be suitable and appropriate for the operation.

– To participate in public relation activities or promotional activities designed at enhancing the image and profitability of the food and beverage department of the hotel.
